As pairings go, it’s hard to imagine anything more idyllic than a mid-summer evening and a slow, intimate dinner backdropped by a vineyard.

In Ontario, thanks to cool climes, complex soil structures shaped by glaciers and the passion and ingenuity of chefs and winemakers, such experiences are possible. This summer, as a part of the Visa Infinite Dining Series, two wineries located in two of the province’s most celebrated wine regions will host one chef-curated dining experience that marries sun-ripened regional produce with the creations of some of Canada’s most revered winemakers. Each multi-course dinner is a one-off event exclusive to Visa Infinite and Visa Infinite Privilege cardholders.

Set amid the vineyards against a glorious summer evening sky, you and a group of fellow diners gather around a long table tucked beneath a tent in the company of the culinary elite. Welcome to Prince Edward County (affectionately dubbed “the County”) where you will join Chefs Suzanne Barr and Charlotte Langley, as well as Chef Jamie Kennedy, Zach and Luhana Littlejohn of Littlejohn Farms, and Chef Stuart Cameron for a feast. Pairings will be made by celebrated winemaker, Keith Tyers. Afterward, a signed copy of Chef Barr’s latest cookbook, My Ackee Tree, is yours to take home.

At Stratus, one-to-watch Chef Rafael Covarrubias and Netflix-show finalist, Chef Darren MacLean, pair their innovative dishes with the vintages of winemaker J-L Groux, a native of France’s Loire Valley. This unique long-table dining experience is set at one of the few wineries in the world where wine is moved through gravity flow tanks or barrels, but never pumped. With Covarrubias's French cooking resume and MacLean's passion for plant-based Japanese fare, diners can expect plates that surprise and delight.
